Easy Protein Pancakes

  • 1 scoop of Sculpt protein powder
  • 1 cup of Kodiak Cakes Power Cakes
  • ¼ teaspoon of baking soda
  • 1 cup of water
  • 1 tablespoon of apple cider vinegar (don’t worry, you won’t taste it in the pancake)

Heat a large skillet or pancake griddle to 375 degrees or a medium high heat. Thoroughly mix dry ingredients in a large bowl. Add the water and apple cider vinegar to the dry mixture and whisk everything together; careful not to over mix! Pour batter onto heated skillet or grill; I usually make 3 medium size or 2 large size pancakes but you can divide the batter into as many pancakes as you want. If you want to add blueberries or chocolate chips, do this immediately after the batter is poured.  After about 3 minutes, or when the edges start getting dry, you know the pancakes are ready to flip. Usually 2 to 3 minutes is all they need on the flipped side and then they’re ready to serve! I like to eat my pancakes with either a drizzle of agave nectar or a little bit or organic raspberry jam. Sometimes, I’ll add natural almond butter or even peanut butter but these protein pancakes are also great plain.
